You are invited to your uncle's house for Christmas. You know there won't be a lot (or any) vegan food and you don't want to make him feel bad. This is the perfect recipe for you!
Ingredients
For the mix:
540 ml (1 can) chickpeas
2 chopped onions
1 chopped leek
2 chopped zuchinis or eggplant
3 chopped garlic cloves
3 Tbs olive oil
454g chopped mushrooms
1/4 cup white wine
2 Tbsp Dijon mustard
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 pinch ground clove
Salt and pepper
For the crust:
I use Crisco. Follow the recipe except for the eggs and add a bit of water if needed.
Instructions
Chop a bit the chickpeas in a culinary robot or blender.
Cook the onions, leek, zuchinis and garlic in the oil.
Add the mushrooms and cook for 5 minutes.
Add the wine, mustard and spices. Simmer until the wine is completely evaporated.
Add the chickpeas and mix.
Cook the bottom of the crust for 5 minutes (temperature according to the guidelines)
Then, put the mix in the crust and cook for 55 minutes.
Makes 2 pies
